Servings

Serve the Sev Usal immediately, while it is still hot. It can be enjoyed on its own, or as part of a larger meal with other dishes. You can also serve it with chutney or other dipping sauces on the side.

Tips

  1. Use fresh ingredients: Use fresh, quality ingredients, such as ripe and flavorful tomatoes, crisp onions, and fragrant spices. This will help to ensure that your Sev Usal has the best flavor and texture.
  2. Adjust the seasoning to taste: The amount of spices you use in the sev usal mixture will depend on your personal preferences. Feel free to adjust the seasoning to suit your taste. You can add more or less of any spice, or omit any that you don’t like.
  3. Cook the legumes properly: It is important to cook the legumes until they are soft and fully cooked. This will help to ensure that they mash easily and blend well with the spices.
  4. Make the sev just before serving: The sev should be made just before serving to ensure that it is crisp and fresh. If it is made ahead of time, it may become soft and lose its crispness.
  5. Serve the Sev Usal immediately: The Sev Usal is best served hot and fresh. If it is allowed to sit for too long, the sev may become soft and lose its crispness.

Storage

  • Place the sev usal mixture in an airtight container and store it in the refrigerator.
  • Store the sev separately in an airtight container at room temperature.
  • When you are ready to serve the Sev Usal, reheat the sev usal mixture in the microwave or on the stove. Top with a generous amount of sev and serve immediately.

Note: It is best to consume the Sev Usal within a few days of making it, as the ingredients may spoil over time. The sev may also become soft and lose its crispness if it is stored for too long.

Ingredient Substitutes

  • Legumes (such as chickpeas or yellow peas): These provide the base for the sev usal mixture. If you don’t have chickpeas or yellow peas, you can use any other type of legume, such as lentils or black-eyed peas.
  • Spices (such as cumin, coriander, garam masala, turmeric, and chili powder): These give the sev usal its distinctive flavor. If you don’t have all of these spices, you can use a combination of those that you do have, or omit any that you don’t like.
  • Onion: This adds flavor and texture to the sev usal mixture. If you don’t have an onion, you can use diced leeks, scallions, or shallots as a substitute.
  • Tomato: This adds flavor and moisture to the sev usal mixture. If you don’t have a tomato, you can omit it or use a small amount of tomato puree or tomato sauce as a substitute.
  • Gram flour: This is used to make the sev, or the thin, crisp noodles that are used to top the sev usal. If you don’t have gram flour, you can use all-purpose flour or cornstarch as a substitute, although the texture and flavor of the sev may be slightly different.
  • Vegetable oil: This is used to fry the sev. If you don’t have vegetable oil, you can use any other type of oil with a high smoke point, such as sunflower oil or peanut oil.
